Let me first start by saying, I'm not a super fancy cook, I can do the basics, but I'm not great with lot's of fancy seasonings or ingredients.
I've been reading & following Funky Junk Interiors blog and hearing all about Donna's journey to eat fresh and healthy and inspire & help others and she created a facebook page that you can LIKE called Junk Loser.
With all this inspiration I'm trying to make more healthy and smart food choices for my family to eat and most importantly, I'm using everything that is fresh, no cans, or boxes. Wish me luck! :)
After:
Last nights dinner: Lemon pepper Roasted chicken with golden potatoes, carrots, and (fresh sourdough bread not shown).
Before:
It's pretty simple, I just seasoned my chicken with sea salt, pepper, fresh squeezed lemon juice, and drizzled with olive oil. I stuffed the chicken with lemon wedges and parsley and then seasoned my veggies with a little lemon juice, sea salt, pepper, threw in a few more lemon wedges and some water. That's it, very easy and it was very moist and delicious!
Dessert:
Very simple, fresh, fast, and delicious dessert.
Fresh strawberries chopped up with a dollop of whipped heavy cream with no sugar. Deeeelicious!
